Review procedures on pigs in a blanket and croissants (ham/sausage). You can bake / make them and hold for four hours without temperature control but must then discard. To hold them longer or to use those the next day you must hold them hot 135°F in a hot holding cabinet and serve when ordered. After preparation or at the end of the day after removal from hot holding rapidly cool them (from 135°F to 70°F within two hours and from 70°F to 41°F of lower with in an additional 4 hours) . Once cold (41°F) they could be held at 41°F or lower for up to 7 days . You then could reheat and serve them when ordered. You cannot keep sandwiches that are not temperature controlled for more than 4 hours. After 4 hours you must discard. Please review the copy of the food code I left you and call me if you have any questions.
