4-301.14 Cook line in serving area. Pizza prep oven is in front of grease drip pan making it very hard to get too. The other issue is that it blocks part of a walkway and could result in a burn. Deep Fat fryer on the other end is all the way against the wall and not under the Ansel fire suppression system. Recommend finding a smaller under grill draw freezer. New freezer is nice but takes up too much room for this application. A smaller unit would allow the Pizza oven to be moved 3 to 4 inches and the fryer to be moved 5 to 6 inches inward. Deep fat Fryer in kitchen is not under the hood. Should be 6 inches of hood over hanging the fryer. Fryer cannot be moved because of a gas supply line next to it. Relocate gas supply line and move equipment all the way under the hood and fire suppression system. Other end of this cook line steam kettle is not under hood and steam is not being caught by hood. Move steam kettle under hood.
4-501.11A Interior of walk in cooler door is damaged. It will soon have a sharp metal edge. Recommend prior to that a piece of diamond plate be used to cover and reinforce door. Door latch on vegetable cooler – loose, hard to close. Recommend a new latch but at least replace broken bolts.
5-205.15B Hot water leak from water pipe along wall under electrical panel on the clean side of dishwasher.
4-901.11A Observed wet stacking of glasses in dinning room 06/15/15/, 09/05/15, 02/02/16 and again today.
