4-501.114a Dishwasher does not have sufficient sanitizer. Inspector tested the sanitizer levels on the dishwasher 5 times. The sanitizer bucket underneath was half full and the sanitizer did come out of
the tube when prompted by machine. Sanitizer only read on test strips immediately out of the tube before it hit the water (50-100ppm). Once the sanitizer hit the water the test strips could no longer read any sanitizer the strip stayed white. 3 vat sink sanitizer vat did not read on the test strips either. When inspector looked to locate the sanitizer source one could not be found. Detergent and Rinse Agent were the only bottles on the side of the 3 vat sink. NOTE: Kitchen staff added regular bleach by hand to the 3 vat sink to allow for proper sanitizing of the dishes. CORRECTED.
