1) East side sandwich prep station is above required temperatures. This refrigeration unit has  had cooling issues before and noted by both manager and inspector. CORRECTED

2) Pizza prep lower refrigeration unit is above required temperatures.
CORRECTIONS:
1) Pizza prep refrigeration was fixed by maintenance (coolant added?)
2) East side prep station was not fixed. Staff shut down this side refrigeration as the unit appears not to be fixed at past attempts. Manager is notifying corporate that this unit is malfunctioning beyond repairs made at previous attempts with replacement parts on unit. Staff has been notified that a notice violation will be issued if this unit is used in its current condition. Staff has consolidated ingredients between several functional refrigeration units until further notice.

3-501.16A2 Sandwich prep cooler holding cut vegetable measured between 48to 55 degrees through several wait times and repeats for cycling. Manager removed vegetables has called repair and will switch to ice bath and has been advised to submerge trays all the way into ice batch not just bottom of tray. This is a temporary solution until refrigeration is brought under 41°F. CORRECTED.
4-601.11C 1) Top of oven has food debris/dust where oven mittens are laid. 2) Walk in cooler fans had some dust debris 3) some trash on walk in freezer floor. CORRECTED

4-601.11A two cups of knives and spatula’s were kept in sanitation solution in large cups. One had food debris in the water. Manager removed this sanitation system idea and will dry store knifes and spatulas at prep site. CORRECTED.
